Cow Milk Dahi:

Dahi is a dairy product obtained by coagulating milk by fermentation process. The coagulation can be caused by adding mesophilic or thermophilic bacterial starter cultures. After adding jamun or industrial bacterial culture in to milk, subsequent lactic acid production will result in dahi. The increased acidity causes the milk proteins (casein) to tangle into solid masses, or curds.

Dahi made form cow milk has sufficient amount of fat content, higher in protein and calcium content. Cow milk dahi is easier to digest due to its fatty acid profile, so it will be lighter on the digestive system.

People who are moderately lactose-intolerant can consume curd without ill effects, because much of the lactose in the milk precursor is converted to lactic acid by the bacterial culture. It can also be used in preventing antibiotic-associated diarrhea. Curd is believed to promote good gut health, possibly because of the effect of lactic acid present in curd.
