Our milk has less bacterial count and we deliver it in cold chain. It helps to maintain milk acidity minimum. Thus, while making curd from our milk at home, you need to follow some proper SOP. First you have to heat milk. Once you see cream is coming up while heating then stop heating further. Keep milk till it gets around 45 degrees Celsius. This is the temperature where if put your finger in milk then you feel it warm (Look warm) but it will not harm you. This is the right time to add culture. Culture is a curd available at home. Please make sure you are frequently changing culture by buying a cup of curd at least every fifteen days. Stir the mixture and Then keep the mixture to room temperature overnight. Your curd is ready in the morning, you can consume it or you can transfer it in the refrigerator.
Yes, you can make a very good paneer at home. Heat the milk first till you see crème portion is coming up in milk pot. Then maintain this temperature by stirring milk by spoon for 5 minutes. Simultaneously take 2-3 juicy lemons for 1 litre of milk, squeeze all in cup of portable water in a pot and heat the mixture. Pour this lemon mixed water in milk slowly. Observe the coagulation. Once you see slight coagulation in milk then stop putting more lemon water. Wait for 8-10 minutes. Whole solids in milk are coagulated and you can see separated yellowish water in mixture. Then sieve it in muslin cloth. Squeeze maximum water out and tight the muslin cloth. Put some weight on it for an hour. Then you can put it in refrigerator. Paneer is ready 2-3 hours after refrigeration. If you want a specific shape then you have to put this muslin cloth in perforated pot.

Ghee can be stored at cool and dry place in kitchen. Paneer and curd have to store in refrigerator and must be consumed before expiry date. Milk if not used immediately after delivery, then it needs to keep in refrigerator. Please keep in mind if milk is kept in refrigerator, then while using shake the milk bottle gently, keep the bottle at room temperature for 5-10 minutes and then heat the milk at low flame.
Use paneer within three days and store it in refrigerator. Need not to freeze it.
